Image Chef: http://www.imagechef.com/ Create images using their images and your text. Lots of fun. I've used it to create banners for web pages, signs for my library, and all kinds of fun stuff.
Wordle: http://www.wordle.com/ You can create fun word clouds on any topic. You can even enter text and see if you've used some words too many times because the more you use the word, the larger the word will appear.
